Lemon Snowballs Cookie Recipe(A Blast from the Past)

It's Christmas Time in The Most Desperate Studio on Planet Earth! And that means cookies!

Tonight I am making my famous Lemon Snowballs. These cookies are everywhere now so it is hard to believe that 15 years ago (when I perfected my own recipe) I couldn't find these anywhere! And, in case of emergency (zombie apocalypse, giant asteroid, republican presidency, or feline invasion), I will post the recipe here so you won't have to live without these delicious lemon sugar bombs. They melt in your mouth, but explode all over your shirt so take care when biting into them - I recommend just popping them into your mouth, whole. Should I say 'mouth hole,' hmm?

Ingredients:
1 cup butter, room temperature

½ cup powdered sugar
1 tsp lemon extract
2 cups flour
Powdered sugar to coat
Directions: Preheat oven to 350° 
Beat butter with an electric mixer for two minutes, add powdered sugar and lemon extract. Stir in flour with a strong wood spoon until well mixed. Roll into 1 inch balls and place on aluminum foil lined pan. Bake for 12-15 minutes. Let stand for 10 minutes before rolling warm cookies in powdered sugar. Place on rack to cool. Roll again in powdered sugar when cookies are completely cool. Makes about 3 dozen.
